The start of the year is the perfect opportunity to recharge your batteries and establish good habits. After the often lavish festive season, many people long for light, nutritious meals that not only taste good but are also easy to fit into their daily routine.

Meal prep is a real game changer: once prepared, you have healthy meals ready to go for several days, ideal for stressful days at the office. Soups are particularly popular as they are easy to transport and still taste delicious the next day.

Our recipe tip for your fresh start: Creamy lentil soup – packed with plant-based protein.

Ingredients:

  • 2 tbsp olive oil
  • Three small onions (150 g), diced
  • 2 garlic cloves, finely diced
  • 1 small piece of ginger, finely grated
  • 1 tbsp curry powder
  • 1/2 tsp chilli flakes
  • 150g red lentils, washed and drained
  • 400g chopped tinned tomatoes
  • 1 tin (400ml) coconut milk
  • 25g coriander, chopped (if desired)
  • 600ml water
  • Salt, pepper

 

Preparation:

  • Slowly fry the diced onions in oil, stirring frequently, until they are soft and lightly browned.
  • Add the curry powder, garlic, chilli and ginger and fry for approx. 2 minutes.
  • Add the lentils and fry briefly.
  • Finally, add the water, tomatoes, most of the coriander (this can be omitted if desired, as not everyone likes it), salt and pepper.
  • Stir the coconut milk until smooth, set aside a few spoonfuls and add the rest to the soup.
  • Bring to the boil and then simmer over a medium heat for approx. 25 minutes. (the lentils should still be noticeable and not completely broken down)
  • Season to taste again
  • Purée the soup or leave it as it is – depending on your preference

 

The soup will keep in the refrigerator for 3 days and can be easily transported in screw-top jars.
